I am sure that I don’t have to tell you again just how much I love this time of year. I have only been talking about it for 2 months. I have pumpkins galore in recipes and my house looks like a pumpkin patch exploded in it!
With the weather turning cooler I turn to comfort food and hearty stews and casseroles. I love to make a meal that I know my family will love and that will nourish them and keep them warm when they head out. By 7 am all three of us have gone our separate ways and we are lucky to come close to sitting down to a family meal anymore. I am making this a priority that we eat all together at the same table at the same time with a hot and healthy meal.
That is where this Autumn Harvest Casserole enters the room. All the amazing flavors of the season rolled up into one perfect meal. I love one-pot meals!

Well, technically this is a 2 pot meal. You need to make your rice first. But this is also a great way to use leftover rice from another meal if you have it. I used Wild Rice but feel free to use white or brown whatever your family prefers. I just love the nutty flavor that Wild Rice has. It really adds richness to this meal.
Sweet potatoes not only add a sweetness to this hearty dish they really add the color and texture that take this from good to great! I use the same herbs and seasonings that you would use for your Thanksgiving meal. Sage, marjoram, poultry seasoning, and fresh parsley. It’s like taking a bite of Thanksgiving in October! You should also have a cosmo or a cape cod on the side to get your cranberries in!

Ingredients
- 1 lb ground turkey
- 1 cup cooked wild rice {you can use white or brown}
- 1 small onion diced
- 1 large sweet potato peeled and diced
- 1 tsp sage, marjoram
- 2 1/2 tsp poultry seasonings
- salt and pepper to taste {min of 1 tsp each}
- Fresh Parsley for garnish
Instructions
- cook the rice according to the package directions
- in a large pan or pot that you can put in the oven heat 2 tbs olive oil over medium high heat
- saute the onions and sweet potatoes for 5-7 min until they start to become tender
- transfer to a bowl and reserve
- brown your turkey in the same pot add a little olive oil if needed
- return the onions and sweet potatoes
- add all the seasonings and rice
- toss to distribute all ingredients
- cover and bake at 350 for 20 to 25 min
- garnish with chopped parsley sprinkled on top
- Enjoy
