Banana Blueberry Muffins seem like the perfect treat to share with you after my time off! Muffins are one of my favorite ways to start the day off, so I felt they were a great way to start back.

Okay, let’s get to the muffins!!
If you have been around for a while then you know I really love making banana bread. It’s quick, it’s easy, it’s amazing tasting! I really enjoy making different versions by adding fun and different ingredients. This time I had some fresh blueberries in the fridge. Fruit and Fruit!

I decided to use my favorite banana bread recipe as a muffin this time. Let me tell you it was a great decision! They were perfect. Soft and fluffy and the blueberries just burst in your mouth.
I really don’t have any tips and tricks to make this recipe go easier for you as it is just so simple. Perfectly, tasty, wholesome goodness, easy! I did add some large crystal sugar to the tops to give it that bakery style. I mean who doesn’t love muffin tops?!! It’s the best part.
Well in the case of these muffins. The best part is the whole thing!!!

Ingredients
- 1 3/4 cups AP Flour
- 2/3 cup sugar
- 2 tsp baking POWDER
- 1/2 tsp baking SODA
- 1/4 tsp salt
- 2 mashed bananas {overripe works best}
- 1/3 cup unsalted butter softened
- 2 tbsp milk
- 2 eggs
- 1 cup fresh blueberries
- 4 tbs large crystal sugar
Instructions
- preheat oven to 350
- line 12 cupcake liners in a muffin tin
- in a mixer combine all the dry ingredients
- then add the banana, butter and milk
- mix on medium low to medium until all ingredients are combined and a nice batter forms
- fold in the blueberries
- fill the cupcake liners about 2/3 full
- sprinkle a bit of the sugar on top of each
- bake for 30 min or until a toothpick inserted in the middle comes out clean
- Enjoy!!
