BBQ Brisket Potato Skins are full of flavor and the perfect addition to any party!
BBQ Brisket Potato Skins are the grown-up version of the classic you know and love. Filled with smoked brisket meat, caramelized onions, sweet BBQ sauce, and you can’t forget the cheese! Serve them as an appetizer to a crowd or make just a few for a great lunch. I am not going to lie. I ate these for lunch and dinner a few nights.

I like to take shortcuts whenever I can. I am gone from the house 10 hours a day for my full-time job. I am not a fan of slaving over the stove for dinner when I get home. BBQ Brisket Potato Skins can be made so quickly and easily. Just pop the potatoes in the microwave! They go from hours to minutes.
You are going to love the caramelized onions. They take the flavor from good to great. They give these skins their grown-up taste. Don’t be intimidated if you have never made caramelized onions before. They are really easy. They take a bit of time, and you keep an eye on them.
Cooked over medium-high heat with butter and a touch of salt, the onions slowly cook and turn a caramelized color bringing the onions’ natural sweetness. Start these first, and they will be ready just as you are ready to layer the skins all up!

Last but most certainly not least, we have to talk about the Brisket! The meat is the star of the show. Now, remember I said that I am all about easy and quick. There is nothing quick about making a great juicy brisket. So let’s cheat! [It’s always fun to sneak a time saving cheat in]
Use a store-bought ready-to-eat sliced Brisket. I love the Jack Daniels brand. It’s smoked and sauced and ready to reheat. Total time saver and yummy!!!

BBQ Brisket Potato Skins Recipe
Ingredients
- 6-10 russet potatoes
- 12-15 slices ready to eat sauced Brisket
- 1/2 large onion sliced {you can slice them a day ahead or that morning}
- 2 tbsp butter
- pinch of salt
- 1/2 cup favorite BBQ sauce
- 3/4 cup shredded cheddar cheese
Instructions
- in a skillet over medium-high heat, melt the butter
- add in the onions and the pinch of salt
- stir until the onions soften and turn translucent
- let cook for a total of 20-25 min You will need to keep an eye on them and stir them every few min {once caramelized, remove from heat}
- while onions are cooking, wash and prick potatoes
- microwave for 6-10 min until soft and cooked
- slice in half and let the flesh cool
- preheat oven to 350
- while cooling, chop the Brisket into 1/8 to 1/4 inch slices
- scoop the flesh out of the halved potato
- start to layer the Brisket, the onions, the cheese, and BBQ sauce
- place in the oven for 10 min or until the cheese is all melty
