I am not going to lie….. This has to be the best French Toast Casserole that I have ever tasted. No Lie! This Blueberry Cheesecake French toast is perfect for a Brunch. We all love those overnight casseroles that make the morning a breeze. Even if there is no reason to celebrate you have this for breakfast and make any day special!
The best part of this dish is the oh-so-creamy and yummy Cheesecake. Oozing with cream cheese and sugary amazingness. So simple to make with only a few ingredients.

You will be the star of the show when you serve this blueberry bombshell. A loaf of french bread, eggs, milk, cream cheese, vanilla, and the star of the show blueberries. Let the bread soak up all the eggy cream cheesy goodness during the night and after a turn in the oven, you will have quite possibly the best French Toast in the history of French Toast! At least everyone at the breakfast table will agree with that statement.
Ingredients
- 1 loaf day-old French bread cubed
- 1 package of cream cheese
- 1/3 cup granulated sugar
- 1 1/2 cups frozen blueberries, tossed lightly with flour (leave frozen)
- 8 large eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla extract
Instructions
- Spray a 9×13 baking dish with nonstick cooking spray (really get it in the corners)
- Layer half the cubed bread in the dish
- with a hand mixer cream sugar and cream cheese and vanilla
- drop by teaspoonfuls over bread
- toss the frozen blueberries in flour
- layer blueberries
- cover with remaining bread.
- whisk the eggs and milk till combined
- pour over bread
- press bread with spatula to help soak up the mixture
- cover and refrigerate overnight
- the next morning preheat the oven to 350
- bake for 45 to 50 min
