Good morning! I hope you are hungry for the best pancakes that you will ever eat! Blueberry Granola Pancakes are my new obsession for breakfast. So easy to make and look at that wow factor!
Saturday’s and Sunday’s are big breakfast days around here. Pancakes are my personal favorite. Steve usually makes a big batch for us. For some reason, men are really good breakfast makers. This weekend I wanted to surprise him with a pancake breakfast of my own.
Blueberry Granola Pancakes are just as easy to make as plain. So why on earth would you want to eat plain when you can have juicy blueberries and crunchy granola?!

Do you have a favorite recipe for pancakes made from scratch or are you let’s just mix it up from a box? I have made quite a few from scratch recipes and I have yet to find one I really like. I am not a fan of thick pancakes. I find that I get the best pancakes consistently from a mix. I love the buttermilk kind. Just add water and you are ready to go!
Which leaves you time to whip up the granola topping. So easy to mix and just a few min in the oven and you are ready to go. Or you can just grab some granola cereal that you already have in your pantry.
Make sure that you use fresh, ripe, and perfectly round blueberries. I don’t fold them into the batter I find that they pop and bleed purple all into the batter unless you like that of course. I sprinkle them right onto the batter after I put the batter in the pan. I like the blueberry to burst in my mouth! Yum!
You can’t forget about the syrup! I know that maple is traditional, but I am not much of a maple fan. Butter Flavored syrup is what I love. Mrs. Butterworth is my all-time favorite! But today, today with all this blueberry goodness I used blueberry syrup!
We’ve talked all about the blueberries and the syrup, so let’s talk about this amazing granola! Oats, brown sugar, flour, and butter! Oh so yum yum yummy! The granola adds the perfect amount of sweetness and crunch that you just don’t get with plain ol’ pancakes. I know that Blueberry Granola Pancakes will become a Weekend Family Favorite Breakfast!
What is your favorite pancake topping?
Ingredients
- your favorite pancake recipe or box mix
- 1 cup blueberries
- 1 cup oats
- 1/2 cup brown sugar
- 1/4 cup flour
- 5 tbsp cold butter cut into small chunks
- extra blueberries for garnish if desired
- and your favorite syrup {try blueberry you won’t be disappointed!}
Instructions
- You can make granola topping a week ahead if needed or the same day
- Preheat oven to 350
- combine oats, flour and brown sugar
- cut in cold butter until all is combined and crumbly
- layer flat on a baking sheet
- bake for 10-15 min
- make pancake recipe or follow box directions for your batter
- heat a skillet over medium high heat
- melt 1 tsp butter
- pour in 1/2 cup of batter
- sprinkle 5-7 blueberries into batter
- once edges start to brown and batter starts to bubble
- carefully flip pancake over
- {the blueberries make the cooking process take just a bit longer than plain pancakes}
- once pancakes are cooked
- sprinkle granola on top with extra blueberries and top with syrup
