Saturday mornings are sometimes more hectic than Monday morning. I still work full time and Saturday is not a day off for me. Steve, my husband, is either working on his honey-do list, {that somehow never seems to get finished just grows longer} brewing beer, or fulfilling promotional activities. We sometimes are like 2 ships that pass in the night.
Whereas cheese is the star of the show in this dish there are so many other flavors going on that make this irresistible! If you have never had Chilaquiles before you are in for a real treat! Layers of salsa verde, corn tortilla chips, and cheese. Traditionally they are served with eggs. I usually make scrambled eggs, but today I want to do a sunny-side-up egg.

I cut the block into cubes and take them to work with me for my 3 pm slump. The protein fills me up and cheese always makes me happy!

Ingredients
- 1-2 cups shredded Kraft Natural Cheese Shreds
- 3-4 cups tortilla chips
- 2 cups salsa verde (use red salsa if you like that better)
- 1 egg for each person eating
- cilantro and cherry tomatoes for garnish if desired.
Instructions
- preheat oven to 350
- in a baking dish spread 1 cup of salsa on the bottom
- layer the chips on top
- sprinkle half the cheese on the chips
- pour the next 1 cup of salsa
- sprinkle the rest of the cheese
- put in the oven and bake for 10- 15 min
- till cheese is nice and melty
- prepare scrambled or sunny side up eggs
- garnish and Enjoy!
