Breakfast Chilaquiles Recipe

Breakfast Chilaquiles are going to revolutionize your crazy busy Saturday Mornings. So often we get caught up in thinking that the weekdays are our crazy busy time and that it’s the only times we need easy meals for the family. Welcome, Saturday morning to a mom with children in sports!

There is no sleeping in with an 8 am soccer game, followed by a noon baseball game, with a dance recital starting at 5! Getting a good breakfast in your kids that doesn’t pour out of a box or pop out of a toaster can be challenging. Breakfast Chilaquiles made with Kraft Natural Cheese Shreds will fill them up and the cheese and eggs will give them a good source of energy from the protein.

Kraft Natural Shreds make this meal so ooey-gooey good! Who doesn’t love great melty cheese over, well anything really! Soccer games and other extracurricular activities are in the rear window for us now. Yet, that doesn’t mean we have slowed down in over-scheduling ourselves as a family.

Saturday mornings are sometimes more hectic than Monday morning. I still work full time and Saturday is not a day off for me. Steve, my husband, is either working on his honey-do list, {that somehow never seems to get finished just grows longer} brewing beer, or fulfilling promotional activities. We sometimes are like 2 ships that pass in the night.

Whereas cheese is the star of the show in this dish there are so many other flavors going on that make this irresistible! If you have never had Chilaquiles before you are in for a real treat! Layers of salsa verde, corn tortilla chips, and cheese. Traditionally they are served with eggs. I usually make scrambled eggs, but today I want to do a sunny-side-up egg.

As for the cheese I love using Kraft Cheese! Kraft Natural Cheese comes in 3 great ways to use. My favorite is the Kraft Natural Cheese Shreds. A sandwich would not be complete without Kraft Natural Cheese Slices. You also can’t have a party without the Kraft Natural Cheese Chunk. Nothing goes better on a cracker than a slice off the block. I cut the block into cubes and take them to work with me for my 3 pm slump. The protein fills me up and cheese always makes me happy!

You can find Kraft Natural Cheese in the Cheese and Dairy section at Walmart. I shop at Walmart quite often. I love the selection and prices they have to offer. They are always lower in price than the local grocery stores. We all can use good savings!

 So go ahead and overschedule your Saturday mornings. Breakfast Chilaquiles come together in a manner of minutes and will fill your little athletes up for a day of activities!

Ingredients

  • 1-2 cups shredded Kraft Natural Cheese Shreds
  • 3-4 cups tortilla chips
  • 2 cups salsa verde (use red salsa if you like that better)
  • 1 egg for each person eating
  • cilantro and cherry tomatoes for garnish if desired.

Instructions

  1. preheat oven to 350
  2. in a baking dish spread 1 cup of salsa on the bottom
  3. layer the chips on top
  4. sprinkle half the cheese on the chips
  5. pour the next 1 cup of salsa
  6. sprinkle the rest of the cheese
  7. put in the oven and bake for 10- 15 min
  8. till cheese is nice and melty
  9. prepare scrambled or sunny side up eggs
  10. garnish and Enjoy!
