Now that we are in the thick of winter in January and February, we need a fun warm me up a drink to banish the Winter Blues! Butterscotch Hot Chocolate and Homemade Marshmallows are just the tickets!
Homemade Marshmallows are a snap to make and they taste better than store-bought! Butterscotch Hot Chocolate is just what you need to warm up after a day of Winter Play! I know that the Holiday are behind us and January always seems like this big letdown, but really if you love Winter sports this is a great month!
Whip up a batch to warm up and snuggle in for the day or night. I know that you will love making your own hot chocolate so much you will never go to the store again!
One of the great things about making your own Hot Chocolate Mix is that you control what goes into the mix. Many store-bought powders contain caramel coloring and preservatives. This little gem is made all-natural ingredients. Well, there is one exception the creamer or powdered milk. If you are a 100% homemade kind of gal then leave this out and know that you have to make it with milk and not water.
The creamer or powdered milk makes it easier to take this mix on the go. You just heat one to two tablespoons to 0ne cup of hot water and you are ready to go! You are going to go crazy over the butterscotch mixed with the chocolate! Butterscotch and chocolate are just kinda made to go together. If you didn’t want marshmallows then crumbled Butterfingers candy would be a smash hit for a topper!
Now let’s talk about these Homemade Marshmallows! I had never made marshmallows before this batch. I have been wanting to do them for a few years now and just never got around to making them. That was a silly mistake! They are so easy to make and they taste so much better than store-bought.

Butterscotch Hot Chocolate and Homemade Marshmallows Recipe
Ingredients
- 1 cup dark or semi-sweet chocolate chips For the Hot chocolate mix
- 1/2 cup butterscotch chips For the Hot chocolate mix
- 3/4 cup dry creamer or powdered milk
- 1/2 cup sugar
- 1/2 dutch process cocoa
- 1 tsp vanilla
- 2 tbsp unflavored powdered gelatin For Marshmallows
- 1/2 cup cold water
- 1 cup granulated sugar
- 1/2 cup light corn syrup, divided
- 1/4 cup water
- 1 tsp vanilla extract
- 1/2 cup powdered sugar for dusting
Instructions
- For the Hot Chocolate Mix:
- In a food processor, process the chocolate and butterscotch chips until they form a fine powder
- add the remaining ingredients and pulse until all is combined
- store in an airtight container
- For the Marshmallows
- spray an 8 x8 baking pan with non-stick spray
- sprinkle gelatine over cold water in a small bowl and let sit for 5 minutes
- in a medium saucepan over high heat the sugar, ¼ cup of the corn syrup, water, and salt in
- bring to a boil and allow to boil, stirring occasionally
- Use a Candy thermometer and boil until 240 f is reached
- during the boil pour remaining 1/4 cup corn syrup into the bowl of a mixer with the whisk attachment
- microwave gelatin that has dissolved in a bowl with water on high until completely melted, about 30 seconds.
- put it in the mixer with the corn syrup
- on low or stir slowly pour the hot mixture into the bowl while the mixer is running
- increase the speed to medium-high and beat for 10- 15 minutes until white and fluffy {it will look a lot like jet puff marshmallow crème at this stage}
- Mix in the vanilla
- Pour mixture into the prepared pan
- sift the 1/2 cup powdered sugar evenly over top
- let set for at overnight a cool, dry place
- use a knife to loosen the marshmallow from the edges of the pan
- turn out onto a powdered sugar-dusted counter and dust it with more powdered sugar
- Cut into 1 -2 " squares (a pizza cutter works great for squares)
- toss the squares into more powders sugar to remove the sticky edges of the marshmallows shake off the excess
- store in an airtight container
