How many busy crazy get everyone up and going mornings do you think you have in a year? Oh only about 365 of them I am sure. With all that running around you deserve a good pick me up and get me going breakfast treat. Cappuccino Muffins have a jolt of caffeine and a ton of wonderful chocolate goodness!
I first had a Cappuccino Muffin about 6 months ago. My co-worker at the time went to this little local coffee shop here in Kansas City. The wife of the couple that owned it made all the baked goodies herself. As a treat, my co-worker would bring in these amazing Cappuccino Muffins. They were by far the best muffin I have ever had out of a coffee shop.

It was always a happy day when these muffins showed up at work. Now that I am no longer working there I am still craving these muffins. I have no idea where this little coffee shop even is! So I made my own version and I have to say that I am really proud to announce that they are spot on! I know that you will love making and eating these guys.
These muffins are made with two types of chocolate and instant coffee granules. Those coffee granules really help give you a quick boost and pick me up. I love baking with instant coffee. It really gives great flavor and doesn’t get bitter or change the texture of the baked good.

Ingredients
- 2/3 cup sugar
- 1/4 cup brown sugar
- 1/2 cup butter melted
- 1 egg
- 1 tbs vanilla
- 2 tsp baking POWDER
- 3 tbsp instant coffee granules
- 1/4 cup dutch process cocoa
- 2 cups flour
- 1/2 cup milk
- 1 cup chocolate chips
Instructions
- preheat oven to 425
- line 12 cupcake liners in a muffin tin
- in a mixing bowl combine both sugars and melted butter
- mix until combined
- add in the egg, vanilla, baking powder, and coffee granules and mix till combined
- add in the cocoa
- slowly add the flour and milk alternating and ending with the flour
- fold in the chocolate chips
- fill each liner 2/3 of the way full
- place in 425 ovens for 5 min
- then turn the heat to 350 and bake for 15 min more
- let cool and enjoy!
