Do you struggle with side dishes? Finding a tasty and healthy option isn’t always that easy. This year I challenged myself to create more side dishes. So here is the first of many easy and yummy side dishes.

I am all about easy meals for busy weeknights. It’s basically the whole theme of my blog. That is why I focus so heavily on easy, quick, and tasty recipes. If my family loves it and I loved making it then guess what? So will you!

I am a huge fan of rice. White, brown, wild, mixed, and even dirty! So it’s no surprise that I chose rice as my first side dish to make for you. Stepping outside my comfort zone and forcing myself to make something with a green vegetable is a very big step for me! Crazy I know. I’m not even a picky eater. I just hate veggies.

Do you see that big piece of green in there? Well, I ate the whole thing and I loved it! I mean what’s not to love about rice and cheese? If you can boil water you can make this recipe. It’s just that easy! I have some best practices for you on the way to create perfect sticky rice each time without boil over.

Let’s face it rice boil over is the worst to clean up off the stove! If you follow my steps you will have perfect rice every time! You can’t miss the easiest way to make perfect rice every time.

Ingredients
  

  • 1 cup white rice
  • 1/2 cup water
  • salt & pepper to taste
  • 1/8 tsp onion powder
  • 2 cups frozen-thawed or fresh broccoli florets cooked
  • 4 oz reduced-fat 2% milk Velveeta cubed {one small carton or half a full size}

Instructions
 

  • make rice {read best tips for perfect rice}
  • microwave the broccoli till hot and tender
  • in the same pot that you made the rice in
  • add the salt & pepper and onion powder
  • raise heat to medium-low
  • place the cubed cheese and stir until melted and combined
  • add in the hot cooked broccoli and stir
  • Serve immediately

Notes

If you want perfect rice every time just follow these simple steps for success!
Rice needs a 1:2 ratio. One cup of rice to two cups of water. You need that extra water to ‘plump’ up and make the rice soft. I always add just a bit more {1/4 cup} to ensure that I have super soft and never slightly crunchy rice. Al Dente is for pasta only.
Boil over was always a big problem for me. I hate the mess that rice boil creates. It’s near impossible to get rid of. Just do this and you will never have to worry about that. Rice contains a lot of starch. Starch is in essence sugar. Sugar is very sticky when heated. Hence boil over mess…… Not Good! To avoid this you can do two things.
Rinse the rice with cold water before you cook it. Just running that cold water of rice in a strainer helps to wash away some of that starch.
What I do and I have never had a boil over again, I increased the size of the pot. In a large stockpot at least 8 Qtrs. place your one cup of rice and two and a quarter cups of water. When that boil starts to happen there is plenty of room. With such small amounts in a large pot, you will not get any boilover!
For the Cooking process, I place the rice then pour the water on top. Turn to high heat and let come to a boil with the lid off. Once a boil starts to happen I turn the heat to medium-low or low and place the lid back on. Walk away. So often we are tempted to keep lifting the lid to check on it. When you do that, you are losing the steam that helps to cook your rice. Place the lid on, set a timer for 15 min and leave it alone.
When the timer goes off take the lid off give it a quick stir and check for tenderness. You more than likely won’t have to cook it any longer. I rarely ever do. But you can place the lid on, turn to low for sure and come back in 5 min.
Follow these steps I guarantee you will have perfectly cooked tender sticky rice every single time!
