I am a huge fan of rice. White, brown, wild, mixed, and even dirty! So it’s no surprise that I chose rice as my first side dish to make for you. Stepping outside my comfort zone and forcing myself to make something with a green vegetable is a very big step for me! Crazy I know. I’m not even a picky eater. I just hate veggies.

Cheesy Broccoli Rice Recipe
Ingredients
- 1 cup white rice
- 1/2 cup water
- salt & pepper to taste
- 1/8 tsp onion powder
- 2 cups frozen-thawed or fresh broccoli florets cooked
- 4 oz reduced-fat 2% milk Velveeta cubed {one small carton or half a full size}
Instructions
- make rice {read best tips for perfect rice}
- microwave the broccoli till hot and tender
- in the same pot that you made the rice in
- add the salt & pepper and onion powder
- raise heat to medium-low
- place the cubed cheese and stir until melted and combined
- add in the hot cooked broccoli and stir
- Serve immediately
