Corn Dog Muffins Recipe, what is this you ask….. Well, I will tell you that they are about just the most perfectly portable perfectly poppable food! You know when you go to the Fair and you can’t wait to overindulge in all the wonderfully greasy yummy food? Well, that hot dog that has been dipped in cornmeal batter and fried to perfection is just about everyone’s favorite treat! These muffins were inspired by the County Fair specialty! All the flavor none of the grease!
Bursting with hot dogs and sweet cornbread and just a touch of green chiles for a little pop of fun! You won’t feel guilty for indulging in one of these tasty treats. Want to make it even less guilty feeling? Use turkey or soy hot dogs! I used our family favorite of Nathan’s Hot Dogs. Really any brand would be just fine. I love that when they first pop out of the oven they have this way of looking just like an ordinary corn muffin.
All tasty and golden brown. Just a perfect addition to any meal.

Ingredients
- 1 box Jiffy corn muffin mix
- 1 egg
- 1/2 cup of milk
- 5-6 hot dogs sliced
- 1 4oz can of green chiles
Instructions
- Preheat oven to 400
- line a muffin tin with 6 cupcake holders
- in a mixing bowl combine all ingredients
- even pour the batter into the six muffins
- Bake for 20-25 min or until set and tops are golden brown.
- You can easily double or triple this recipe
