I am sure that you already know that July is National Ice Cream Month. As hot as it has been here ice cream is welcome almost any time of day! Today I have made for you a most delicious Chocolate Cake with Coffee Ice Cream and a pudding frosting!! I just know that you are going to love Cup of Joe Ice Cream Cake.
I know that it may seem that an ice cream cake is not worth the hassle. But, let me tell you this cake is so easy that the only hard part will be waiting for it to freeze up! You are going to swoon over the chocolate and coffee flavor combination. Everyone loves coffee ice cream and chocolate cake. Cup of Joe Ice Cream Cake takes care of all your cravings!
This cake cuts beautifully. A perfect smooth line each time. I know I have told you before I do not have the best knife skills. Luckily you don’t need them with this cake. Run your knife under hot water, wipe it off and then slice.
You will have a beautiful slice with each cut.
That seemingly perfect layer of coffee ice cream may look like it took skill, but again a total breeze. Let the ice cream carton sit out for about an hour. You want it really melted. It will look frothy or fluffy. Don’t let it get to liquid though.
It spreads like frosting and you just keep adding it on until a bit more than half the carton is used. Place the rest back in the freezer, you can serve this on the side. It’s not like MORE ice cream is bad…… It’s Great!!!
Let’s talk about this crazy good pudding frosting. Simple to make. Chocolate pudding and cool whip. Yep, that’s it! it is so light and fluffy and it makes the perfect topping to this Cup of Joe Ice Cream Cake.
Here are my tips for making this cake: make your pudding in the morning or the day before so it’s ready to go. Blend the cool whip and the pudding really well. I still had a few white streaks show up where I missed. Work fast when frosting and don’t get frustrated if it looks really messy. Once it’s back in the freezer it hardens up nice.

Cup of Joe Ice Cream Cake Recipe
Ingredients
- 1 box instant chocolate pudding {follow directions for how much milk}
- 1 tub cool whip thawed
- 1 box chocolate cake mix {or use your favorite from-scratch recipe}
- 1 quart coffee ice cream
Instructions
- make the pudding ahead of time
- take the ice cream out to melt {frothy not liquidy}
- make the chocolate cake according to package directions
- LET COOL COMPLETELY before you slice in half
- once cooled and sliced in half
- spread a little more than half the tub of ice cream
- take the ice cream all the way to the edge without spilling over
- place the top layer on the ice cream
- place cake in the freezer for 1-3 hours
- Meanwhile, take the pudding and the cool whip and fold them together completely
- put back in the fridge to chill
- once the cake is frozen hard take out and begin to frost
- I frosted the sides but it was a really big messy ordeal
- When I make this again I will only frost the top
- if you feel brave go ahead and do the sides
- freeze again for 1-3 hours or overnight {best}
- let sit for 5 min and use a warm knife to slice
