French Spaghetti Recipe

French Spaghetti Recipe

Are you looking for a new and exciting dinner? Something that you would not have thought about making? Something that tastes amazing and is easy to make? Then French Spaghetti is just for you!!

I love a good robust pasta dish and this meal really delivers! So full of flavor and so easy to make. French Spaghetti is a super easy version of the classic French dish Coq au Vin, which means chicken in wine. Wait do you read that right? Oh yes, I did write the word wine! You can even drink a glass or two while you are cooking.

I would love to tell you that this is my recipe. It’s so good that I just might have been tempted to “steal it”. The truth is my friend Trish Rosenquist, whose blog is Mom on Time Out, made this delicious recipe. She also just wrote a fantastic cookbook 100 Ways to use Rotisserie Chicken in Everyday Meals. I am so honored to be given a copy to review.

From Rotisserie Chicken Casserole, the recipe that started her journey, to Parmesean Chicken Corn Chowder, all 100 recipes are amazing, with easy-to-follow directions and most of all tasty!

As you can tell by the cover of the cookbook the photography is beautiful. As you know we eat with our eyes first and this cookbook will make you hungry! Just wait till you learn what Liquid Gold is! It changed my life and my mashed potatoes.

As you can see this was steaming hot when I snapped the photo and everyone was clamoring for dinner. It smelled so good that it brought everyone in the house up to the studio excited that dinner was coming to them really soon. Both the 2 legged and 4 legged people! The 4 legged ones are by my side all the time….

You can just see the great chicken and the robustness of the sauce. I am telling you that this is so full of flavor and surprisingly it was more filling than traditional spaghetti. One generous bowl of this and you and your tummy will be smiling all night long.

Ingredients

  • 2 tbsp olive oil
  • 1/4 cup butter
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 tsp rosemary
  • 2 tsp oregano
  • 1/2 tsp thyme
  • 1 tbsp dried parsley
  • 1 20oz can of tomato sauce
  • 1 4oz can of tomato paste
  • 1 cup dry red wine (plus 2 or 3 cups for you!)
  • 3 cups shredded rotisserie chicken basically the whole chicken
  • 16 oz of spaghetti

Instructions

  1. in a saucepot heat the olive oil over medium heat and add the onions
  2. let the onions cook until translucent
  3. add in the tomato sauce and seasonings
  4. mix in the chicken and pour in the wine
  5. bring to a boil and then reduce to a simmer
  6. boil the water for the pasta
  7. let the sauce simmer while the pasta is cooking
  8. drain and plate the pasta
  9. pour the meat sauce on top
  10. serve with parmesan cheese and fresh flat-leaf parsley if desired
