I love the great flavor that Charcoal brings to grilled meat. You don’t have to make skewers out of this. Just the chicken breast alone would be good. Actually, I think if you used skin on bone in thighs this dish would knock out all other grilled chicken right out of the Ballpark!

Ingredients
- 4 Chicken Breasts boneless for skewers and diced into 2-3″ cubes
- salt and pepper to season the meat
- For the marinade:
- 1/2 cup Raspberry Jam
- 1 tbsp Dijon Mustard
- 3 tbsp Champagne Vinegar {you can use white wine vinegar instead}
- 1/4 cup Honey
- 1 jalapeno seeded and diced {leave the seeds for more heat}
- 1 tsp of each salt and pepper
- For the Glaze:
- 1 tbsp Honey
- 3 tbsp Raspberry Jam
Instructions
- salt and pepper the chicken and place in a large Ziploc baggie
- in a prep, bowl combine all the marinade ingredients and whisk
- pour over the seasoned chicken breasts
- seal and refrigerate for 8 hrs min overnight is best.
- to make the glaze whisk the jam and honey in a bowl
- When you are ready to grill set your coals or gas to a medium-high heat
- thread the chicken on the skewers
- cook over direct heat 8 min per side open lid
- brush the glaze on the meat
- move the meat to indirect heat closed lid and cook for 5 min
- turn and glaze the other side and close the lid and cook for 5 more min or until done
- remove from heat
- Enjoy!
