Hot Bacon Potato Salad is perfect for all your entertaining and cookout parties. Best thing? No Mayo! Now you don’t have to worry about the heat or the sun. Just eat away until your heart’s content….. or your belly is full!
This potato salad takes only a few min to make and can be served cold or warm. You will love all the bacon and tangy apple cider vinegar flavor in this salad.
Much like German Potato Salad, Hot Bacon Potato Salad is perfect no matter the temperature served. Serving it warm just means you get to it eat it faster!
Here are just a few tips to make this Hot Bacon Dressing Potato Salad recipe even easier for you. Make the bacon and hard-boiled eggs in advance.
Cut the potatoes in pieces before you add them to the pot. Place your potatoes in an empty pot then add the water until it covers all potatoes. This will keep hot boiling water from splashing on you when you add them in.

Salting the water heavily will not only help the water boil faster it will season the potatoes allowing you to add less salt later.

Hot Bacon Dressing Potato Salad Recipe
Ingredients
- 2-3 lbs baby red potatoes
- 1/2 package of bacon and the drippings
- 4 hard-boiled eggs cooled, peeled, and chopped
- 1/2 cup apple cider vinegar
- 1/4 red onion diced small
- 1/4 red onion sliced
- 1 tbsp sugar
- 2 tbsp corn starch
- 3 tbsp water to make the slurry
- salt and pepper to taste
- 1/2 tbsp red pepper flakes
- 1/8 cup chopped fresh parsley
Instructions
- make the hard-boiled eggs and chill
- meanwhile: cut the baby red potatoes into quarters
- place in the bottom of a pan fill water to cover
- salt the water and bring to a boil
- boil for 7-8 min or until fork tender
- remove from water drain and run cold water over
- cook the bacon and reserve the fat
- move the cooked bacon to paper towels to drain
- in the drippings over medium heat add the diced onions
- cook until onions are soft and translucent
- add the cider vinegar and the corn starch slurry
- {vigorously shake or whisk 2 tbsp cornstarch and 3 tbsp water to make slurry}
- bring to a boil and cook for 3-4 min or until all is thickened
- place potatoes in a mixing bowl
- toss in the chopped hard-boiled egg, sliced onions, and parsley
- pour in the Hot Bacon Dressing and toss to coat
- serve warm, room temp or chilled
