Simple to prepare, just a few ingredients make this a dish that you will come back to time and time again.
One of the big flavor boosters is Chicken Broth. Normally I use water to boil my rice, but this time I really wanted to infuse bold flavors so I used chicken broth. It really helped plump up the rice and I loved the flavor!
Once you add in the bright fresh flavors of lime and cilantro, you have an amazing side dish that the family will rave about!
Lime Cilantro Rice Recipe
Ingredients
- 1 cup long-grain rice
- 2 cups chicken broth
- juice of one lime
- 1 tsp lime zest
- 1/4 cup chopped cilantro
- salt and pepper to taste
Instructions
- place the rice and chicken broth in a deep pot
- bring to a boil
- reduce to a simmer and cover
- simmer 15 or so min {each stove performs differently}
- remove once all the liquid is absorbed and rice is fluffy
- add in salt and pepper to taste
- add the zest and the juice of the lime
- fold in the cilantro
- serve immediately & Enjoy!
