“No Pumpkin” Pumpkin Pie Blondies, it sounds crazy, right? Not if you are someone that is not a fan of pumpkin baked treats. Which by the way is not me! My hubby, the pickiest eater on earth, is one of those few who are not a fan. But he’s definitely a fan of these blondies!
Whether you love pumpkin or not these “No Pumpkin” Pumpkin Pie Blondies are amazing and you need to make these for your Thanksgiving Dessert table or just for a fun treat this holiday season. Full of great pumpkin pie flavor, chopped pecans, and yummy white chocolate chips!
Blondies are a great alternative to cookies and brownies. Not that I won’t eat every cookie and brownie that crosses my path, but during the holiday baking season it’s fun to throw something new and different into the mix. Make these for your family and they will be very Thankful!
If you have ever baked with pumpkin before you know that it can become cakey and a little too dry. Getting that sweet spot of pumpkin to flour ratio can be a challenge. With these blondies, you don’t have to worry about that at all. These blondies are moist and dense and sweet just like you love them!

As you can see I couldn’t wait to take a bite. Oh My Goodness, your mouth will be in heaven when you eat these “No Pumpkin” Pumpkin Pie Blondies! You can mix it up by using dark or milk chocolate chips, cinnamon chips would rock also!
You can leave out the pecans if you are not a nut person, or use walnuts or almonds instead. Whatever you like to mix in just make sure that you make these! You will not be disappointed.
The only way to make these “No Pumpkin” Pumpkin Pie Blondies better, is to top them off with a cream cheese frosting! Let me see a show of hands who doesn’t like cream cheese frosting……… Yep, that’s what I thought No One raised their hands!!!!

“No Pumpkin” Pumpkin Pie Blondies Recipe
Ingredients
- 3/4 cup softened butter
- 3/4 packed brown sugar
- 2 Eggs
- 1 tsp rum or rum extract {the secret ingredient!}
- 2 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/3 cup AP flour
- 1 cup white chocolate chips
- 3/4 cup chopped pecans
- 1 cup powdered sugar for frosting
- 4 tbsp cream cheese for frosting
- 1 tbsp vanilla for frosting
Instructions
- preheat oven to 350
- grease and line an 8×8 pan with parchment paper letting sides hangover to act as handles
- in a mixer cream butter and brown sugar
- add eggs, rum, and salt
- mix in pumpkin pie spice and baking powder
- slowly add in the flour
- mix until all is combined and batter forms
- fold in white chips and pecans
- bake for 20-25 min
- let cool completely and remove by pulling on parchment paper
- mix all the frosting ingredients and spread onto blondies
- cut into squares
- can be stored in an airtight container in the fridge for 1 week
