That might make for a boring post to read. Honestly, these Pecan Pie Muffins are truly the most amazing best tasting easy to make I have ever made!
Have you ever seen a more gorgeous and drool-worthy muffin? These muffins are rich, sweet, dense, and oozing pecan pie flavor. You are truly never going to go back to a plain ole blueberry muffin again. I know I sound like a broken record and you might not really believe me. So my answer to that is to jump up and make a batch right now! You Will NOT be disappointed.
This recipe makes a small batch of just 8 muffins. You can double or triple the recipe as needed if you need. I like that this makes only a few. I am just too tempted to eat them all!!!
The crowning glory to these muffins is the thick rich frosting. Made with the Dark Corn Syrup just like Pecan Pie! I love that the frosting is in between a frosting and a glaze. The Corn Syrup keeps it stable and just a bit viscous. It also firms right up so if you need to transport them.

You can whip these up for breakfast in 30 minutes. Sending the family out with a delicious start to their day. You could also serve these as a snack and they are good enough for dessert!

Ingredients
- For the Muffins:
- 1/2 cup melted butter and cooled slightly
- 1 cup brown sugar packed tightly
- 2 eggs
- 1/2 cup AP flour
- 1 cup chopped pecans
- For the Frosting:
- 1 tbsp dark corn syrup
- 1-2 tsp vanilla
- 1/2 cup powdered sugar
- whole pecans for garnish
Instructions
- melt the butter and set aside to cool
- preheat oven to 350
- line a muffin tin with 8 liners
- in a mixer cream the butter and brown sugar
- add the eggs and mix til combined
- add in the flour
- add the pecans
- mix til batter forms
- pour butter into muffin cups about 2/3 full
- bake for 20-25 min
- while baking whip up the frosting
- in a bowl with a whisk
- combine all frosting ingredients
- using vanilla and powdered sugar to reach desired consistency. {you want it in between a glaze and a frosting}
- let muffins cool about 5 min before frosting
- Place a pecan on top of each
- Enjoy!
