Skinny Blondies and Chocolate Frosting Recipe
Ingredients
- 1 cup Splenda brown sugar substitute
- 1/2 cup butter softened
- 3 eggs
- 2 3/4 cups AP flour
- 2 1/2 tbsp baking powder
- 1/2 tbsp salt
- 2 tbsp vanilla
- 1 cup Splenda granulated sugar substitute for the frosting
- 2 tbsp light corn syrup for the frosting
- 2/3 cup heavy cream for the frosting
- 4 oz bittersweet chocolate chopped for the frosting
- 4 tbsp butter for the frosting
- 1 tbsp vanilla for the frosting
Instructions
- preheat oven to 350
- grease a 9×13 baking dish
- in a mixer cream the brown sugar and butter
- add in the eggs and vanilla
- salt and baking powder
- mix until all combined
- slowly add the flour mix until a batter forms {this will be very thick and a little difficult to spread}
- spread into prepared pan {the brown sugar acts a little differently and makes for a very stiff batter}
- bake for 30 min or until a toothpick comes out clean
- set aside to cool
- in a saucepan over medium-low
- bring the white sugar, corn syrup, chocolate, and cream to a boil
- boil for 4 min stirring very frequently
- remove from heat and add butter let melt in without stirring
- let come to room temp
- add in vanilla and beat with a whisk until thickened and spreadable
- spread on top of blondies and cut and serve!
