Has everyone already fallen off their New Year’s Resolution? I was resolved this year to not have a New Years Resolution. Year after year I say I am going to get in shape, be anally organized, and make all my dreams come true. Then by Jan 15th, I am so hungry I am constantly angry, I am depressed that all the exercise clothes I bought don’t make me look sporty but fat, and that my inbox and pantry are still a black hole……
Sound familiar? Well, this year my Non-Resolution was just to be the Best Me I can Be. This means I won’t be binge purging, trying to change 41 years of non-regular exercise behavior into a marathon runner overnight, and just failing miserably. Being the Best Me that I can Be will help me to make better decisions. A little less sugar, a few more fruit, and veg, stairs vs elevator. Small easy to manage changes that will make a larger impact because I can maintain this kind of decision. That is where these Cinnamon Rolls come into play.
Small easy changes don’t mean that you should deny yourself all sources of sugar and yumminess. That is just crazy talk!
These rolls are full of cinnamon, drenched in frosting, and are just the sweetest way to start the day guilt-free. There are only 2 tbs of brown sugar in the dough and 1/4 cup powdered sugar in the frosting! Totally Guilt-Free!
Just look at how moist and ooey-gooey they are.
The secret ingredient in the frosting? Fat-Free Sour Cream. That’s right Sour Cream and it’s Fat-Free! See I was serious when I said that they were guilt-free. I do have to warn you though, if you eat the whole batch at once they are no longer skinny.

I sent them out of the house so that wouldn’t happen to me. See being the Best Me that I can Be is already helping me make better choices.
Now I may or may not have cheated a little bit on the filling. I just felt that they needed more brown sugar than was called for. So ok I did Cheat a little. {the best me said that it was ok to cheat a little!} I snuck in a small handful of brown sugar for the filling.
This is an easy yeast dough recipe. I use Red Star Dry Active Yeast in the jar. I find that it works consistently and better than the packet yeast. This dough does have 2 rising cycles but doesn’t let that scare you. I have a foolproof way to make sure that your dough works every time. Preheat your oven to 250 then turn it off. Get a dish towel wet with hot water and wring it out really really well. Place the towel over the bowl that has the dough in it and put it in the warmed but turned off oven. You now have the perfect environment for your yeast dough to rise. For this recipe don’t put the towel back on the baking dish for the second rise.
So go ahead and indulge in these Skinny Cinnamon Rolls. They are perfect for all sorts of New Year’s Resolutions. Even if you are just trying to be The Best You that You can Be!!

Ingredients
- 1 cup almond milk
- 2 tbs packed brown sugar
- pinch of kosher salt
- 1 tbs dry active yeast
- 1/4 cup warm water
- 1 egg beaten
- 4 1/2 cups AP flour
- 1/2 cup quick cook oats
- 2 tbsp cinnamon
- 4 tbsp light butter with canola oil divided
- Frosting:
- 1/3 cup fat free sour cream
- 1/4 cup powdered sugar
- 1 tbs vanilla extract
- 3-4 tbsp Almond Milk
Instructions
- in a small sauce pan heat the milk, brown sugar and 2 tbsp of the light butter till almost hot
- hold to the side off the stove
- in the bowl of your stand mixer add the 1 tbsp yeast to the warm water let stand 10 min
- add the now lukewarm milk mixture to the yeast
- mix in the beaten egg
- with the dough hook attachment slowly add the flour in and incorporate till a nice elastic dough forms
- grease a large bowl and place dough ball in and cover with a damp warm cloth and let rise 1 hour in a warm area
- punch dough down and on a lightly floured surface roll the dough out into a rectangle
- grease a 8×8 baking dish
- in a small bowl combine the cinnamon, oats and the last 2 tbsp of light butter
- mix until a paste forms
- spread over the rolled out dough to 1/4″ of the edge
- {this is where I cheated and spread a small handful of brown sugar}
- roll the dough up into a log and slice 1 1/2 ” thick
- place cut side down in the greased baking dish
- let rise in a warm area for 30 min
- preheat oven to 375 and bake for 20- 25 min
- cool on a wire rack
- mix the sour cream, powdered sugar, vanilla extract and the Almond Milk till you reach the desired consistency {I like it a little thick so it clings to the sides of the roll}
