You won’t miss the grill for this recipe! I can guarantee that no one will be able to tell that this wasn’t smoked all day on the grill. The slow cooker makes the chicken so juicy and falls apart it almost pulls itself. With a homemade BBQ seasoning and little help from your favorite brand, you have the most delicious BBQ Chicken Sandwich this Side of the Mississippi!
Depending on which side you live on….. this basically means it’s the Best Ever! You will love Slow Cooker Pulled BBQ Chicken Sandwiches all year long.
You will love how thick and rich the sauce is. There is a special ingredient that really pops the flavor. In my Post-Last Monday, I told you how my Husband is a Craft Brewer. {Check out the Nanobrew Fest we served at} I used his really tasty Amber Ale. Since you can’t go into my Basement and get a pint or two, I suggest using any beer that you prefer. Thicker and darker is better than a Light Beer, just for the flavor and body.
If you want to skip the beer all together then just use Chicken Broth as a substitute.
You are going to love this recipe and I just know that you will make this over and over again! It’s perfect for a crowd. If you are already out in the heat grilling up and you just think that you need more to serve your hungry bunch, then throw this in the Slow Cooker in the morning!

Ingredients
- 3 large skinless boneless chicken breast
- 1 tsp salt
- 1/4 tsp smoked salt {optional}
- 1/2 tsp black pepper
- 1/2 tsp each onion and garlic powder
- 1 tbsp chili powder
- 1/4 tsp red pepper flakes
- 12 oz Amber Ale {or beer of choice} {substitute chicken broth}
- 1 cup bbq sauce
- 8 tbsp cornstarch
- 6 tbsp water
- 6-8 onion buns or buns of choice
Instructions
- place chicken in the slow cooker
- in a small bowl combine all the seasonings
- mix them up
- sprinkle over chicken
- slowly pour beer on the sides of the chicken try not to knock off the seasoning
- let foam come down
- add the bbq sauce
- cover and cook on high for 2.5 hours
- take the chicken out and shred with 2 forks
- place back in the slow cooker
- combine cornstarch and water to make a slurry
- if juices are boiling in the slow cooker you can add and cover for 30 min
- if you want it faster:
- after you shred place in a large saucepan and the juice from the slow cooker all of it
- add the slurry and boil while stirring for 10 min to thicken
