Taco Cups Recipe

Everybody has a Taco Tuesday sometimes. Why not try something new to make it a bit more fun? These Taco Tuesday Cups are fun, tasty, and easy!

I can tell you that I am no stranger to weeknight doldrums….. Taco Tuesdays, Wednesday Meatloaf, Thursday Spaghetti. I am sure that you have had the same thing happen to you. I spend so much time thinking about all the sweet treats to make for you that I forget we need to eat dinner too! This week I am determined to make some new and fresh dinners for everyone. I just know that you are going to love Taco Tuesday Cups!

If your crew likes tacos or taco salad then I know they will love these. Easy to whip up on a busy weeknight. You can make a bunch for a crowd or just a few for an appetizer.

We made quite a hearty meal of these. These cups couldn’t be easier. It’s an Egg Roll wrapper! Baked and not fried makes it a much healthier option than corn tortilla taco shell.

Some ground beef, taco seasoning, refried beans, cheese, sour cream, salsa. Everything you love about tacos is all wrapped up in a neat little cup. These guys make a filling meal with a salad or Spanish rice on the side. They are also quite a showstopping appetizer at a party.

I squeeze a bit of lime on top and garnish with cilantro. Choose your own toppings, olives, corn, or jalapenos. It’s your turn to change things up! Have fun and go wild!

Ingredients

  • 6 -12 egg roll wraps {6 for dinner or 12 for appetizers, also double the rest of the ingredients}
  • 1 lb of ground beef
  • taco seasoning
  • 1 10oz can of refried beans
  • 1/2 cup shredded cheddar cheese
  • sour cream, salsa, cilantro for garnish

Instructions

  • preheat oven to 350
  • brush olive oil on both sides of the egg roll wrapper
  • place wrappers in muffin tins to make the cup shape
  • bake for 8-10 min or until golden brown (I underbaked the ones in the photo)
  • meanwhile, brown the ground beef drain grease
  • add the taco seasoning
  • add the refried beans and mix to combine
  • heat all the way through
  • spoon beef bean mixture into each cup in equal amounts
  • top with cheese, salsa, and sour cream
  • a squirt of lime is very good too if you want it
