You can adjust the spice according to your family’s preference. If you don’t want to use the Tequila just substitute with milk. The alcohol cooks away just leaving the flavor behind.

Tequila Corn Fritters Recipe
Ingredients
- 1/3 cup corn meal
- 1/4 cup AP Flour
- 1/2 tbsp baking powder
- {you can use 2/3 cup of Jiffy mix instead of these 3 ingredients}
- 1 tbsp sugar
- 1 tbsp salt & Pepper
- 1/2 tsp cayenne pepper
- 2 tbsp tequila
- 1/3 cup milk
- 2 cups corn kernels {if using fresh make sure they are cooked. frozen should be thawed and canned drained}
- canola oil for frying
Instructions
- in a mixing bowl combine all the dry ingredients
- stir in the tequila and milk until batter forms and most of the lumps are gone
- fold in the corn
- in a frying pan heat about 2 inches of canola oil to approx 375 {or until a drop of the batter sizzles}
- scoop spoonful amounts of batter into the hot oil
- cook for 2-3 min on each side
- drain on paper towels
