“No Pumpkin” Pumpkin Pie Blondies Recipe

Ingredients
  

  • 3/4 cup softened butter
  • 3/4 packed brown sugar
  • 2 Eggs
  • 1 tsp rum or rum extract {the secret ingredient!}
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/3 cup AP flour
  • 1 cup white chocolate chips
  • 3/4 cup chopped pecans
  • 1 cup powdered sugar for frosting
  • 4 tbsp cream cheese for frosting
  • 1 tbsp vanilla for frosting

Instructions
 

  • preheat oven to 350
  • grease and line an 8x8 pan with parchment paper letting sides hangover to act as handles
  • in a mixer cream butter and brown sugar
  • add eggs, rum, and salt
  • mix in pumpkin pie spice and baking powder
  • slowly add in the flour
  • mix until all is combined and batter forms
  • fold in white chips and pecans
  • bake for 20-25 min
  • let cool completely and remove by pulling on parchment paper
  • mix all the frosting ingredients and spread onto blondies
  • cut into squares
  • can be stored in an airtight container in the fridge for 1 week
