Cup of Joe Ice Cream Cake Recipe


  • 1 box instant chocolate pudding {follow directions for how much milk}
  • 1 tub cool whip thawed
  • 1 box chocolate cake mix {or use your favorite from-scratch recipe}
  • 1 quart coffee ice cream


  • make the pudding ahead of time
  • take the ice cream out to melt {frothy not liquidy}
  • make the chocolate cake according to package directions
  • LET COOL COMPLETELY before you slice in half
  • once cooled and sliced in half
  • spread a little more than half the tub of ice cream
  • take the ice cream all the way to the edge without spilling over
  • place the top layer on the ice cream
  • place cake in the freezer for 1-3 hours
  • Meanwhile, take the pudding and the cool whip and fold them together completely
  • put back in the fridge to chill
  • once the cake is frozen hard take out and begin to frost
  • I frosted the sides but it was a really big messy ordeal
  • When I make this again I will only frost the top
  • if you feel brave go ahead and do the sides
  • freeze again for 1-3 hours or overnight {best}
  • let sit for 5 min and use a warm knife to slice
  • Enjoy!!!!
